This is a simple recipe for a banana bread with walnuts. If you got some Cognac, brandy or dark rum add a dash. The alcohol will boost the other flavors and add a fine touch to it. I used some Hennessy this time but for baking purpose a less fancy Cognac would do just as fine. This banana bread recipe is a delicious treat that’s not too sweet and really moist.
4 ripe bananas
5 dl (2 cups) flour
1/2 dl (0.2 cup) yoghurt
3 tablespoons honey
1 1/2 dl (0.6 cup) walnuts
75 g (0.15 lb) browned butter
1 tablespoon baking powder
2 teaspoons cinnamon
6 cl (2 oz) Hennessy
1/2 teaspoon salt
- Pre heat oven to 175°C (350°F).
- Mix all ingredients but save one banana to cut in half and place on top + some walnuts to sprinkle on top.
- Put the batter in a buttered baking tin and bake for about 55 min at the bottom of the oven (depending on the size of the baking tin – check the bread after 45 min and see if it’s firm enough).
- Rest for 15 minutes and then serve with butter or Nutella.
Tips: When baking – play around with browned butter, it adds a lot of carmelized and rich flavours. Goes very well with walnuts, hazelnuts, coffee, chocolate, dark rum, brandy and vanilla to just name a few.
